Kim Hunter always knew she wanted to do something with food for a living. She realized that dream in 2013 with the opening of Kimbap, where the flavors of Korean cuisine inspire her farm to table restaurant in downtown Raleigh. The story goes something like this: Born in South Korea, Kim was adopted at the age of one by Mike & Sarah Conyer. She joined her new family in a working-class suburb near Detroit, MI. Family meals were humble yet comforting. Her mom Sarah, being a hospitable midwestern woman, always had a little extra food on standby to feed unexpected visitors. To honor the birthplace of Kim and her two adopted siblings, Kim's parents made an effort to prepare Korean meals for birthdays and special celebrations, Exploring the ingredients and cuisine of the places she has called home provided a sense of connection. Memories were formed around the dinner table and Kim's passion for food and feeding people came to life. Years later in Raleigh, North Carolina, Kim decided it was time to work with food. With a love of locally grown fresh food and a desire to connect with her country of origin, she began selling Korean dumplings at local farmers' markets. Shortly thereafter, she opened the doors at Kimbap, with a committment to fresh, seasonal ingredients in her Korean-inspired menu. At Kimbap, locally grown freshness is central to our mission. We pay homage to the vibrant flavors of Korean cuisine while giving a gracious nod to southern comfort food
